Marinated courgette  & macerated cherry tomato Salad

The Kinross 'Luminaire' Central Otago Pinot Noir Rosé 2024 is a perfect match for marinated courgette and macerated cherry tomato salad, thanks to its bright acidity and fresh red berry flavours. The juicy strawberries, raspberries, and cranberries enhance the natural sweetness of the tomatoes, while the wine’s floral notes of cherry blossom and rose petals complement the light, herbaceous courgette. Its crisp acid backbone cuts through the marinade, keeping the pairing refreshing, while the mineral finish with hints of pomegranate and mandarin adds complexity and depth to this vibrant summer dish.

INGREDIANTS 

4 courgette

3 lemons – juiced

½ tsp salt

1 punnet cherry tomatoes – cut in half

1 tbs white balsamic vinegar

8 slices sliced prosciutto

200g feta

1 bunch chives

¼ tsp caster sugar

 

Method 

Finely slice the courgette lengthways and toss in a bowl with the lemon juice and ¼ tsp salt to marinade for a few hours in the fridge. 

In a saucepot heat the balsamic vinegar and ¼ tsp salt and pour over the tomatoes and chill before serving.
